Ingredients
- 2 cod or halibut fillets, 6–7 oz each
- ¼ cup dry farro (about ¾ cup cooked)
- 1 bunch kale (or spinach)
- 3 cloves garlic, sliced
- 1 lemon
- Olive oil, salt, and pepper
Instructions
- Cook farro in about 1 cup water or broth for 25–30 minutes until chewy-tender. Drain any excess.
- Strip and chop the kale. Sauté in olive oil with sliced garlic for 4–5 minutes, adding a splash of water to wilt. Salt.
- Season the fish and roast at 400°F for 12–14 minutes, or pan-sear 3–4 minutes per side.
- Serve fish over farro with kale on the side and a squeeze of lemon.
- Refrigerate the second fillet for lunch.
Notes
- Farro portion (¾ cup cooked) is a floor. Bump to a full cup on heavy training days.
- One serving lands around 45–55 g protein plus fiber.
