Ingredients

  • 1¼ lb ground turkey, 93/7
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 yellow onion, diced
  • 2 jalapeños, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • Salt, to taste

Instructions

  1. Brown the turkey in a pot with a little oil, breaking it up as it cooks. Salt.
  2. Add onion, jalapeños, bell pepper, and garlic. Cook about 5 minutes until soft.
  3. Stir in the spices and tomato paste and cook 1 minute.
  4. Add diced tomatoes, both beans, and about 1 cup water. Simmer 25–30 minutes.
  5. Serve. Cool the rest and refrigerate or freeze in portions.

Notes

  • Make the full pot. It covers dinner plus a fallback dinner or extra lunch later in the week.
  • One serving lands around 45–55 g protein plus fiber.
